Coconut Rice

  • 1 cup jasmine rice
  • 1 lime
  • 4 tsp cilantro
  • 3/4 cup coconut milk
  • 1 cup water
  • 1/2 tsp kosher salt
  • 1/2 tsp ground white pepper (optional)


  1. Rinse rice under cold water until water runs clear; drain well. Zest lime (2 teaspoons) then juice (2 tablespoons); chop cilantro.
  2. Add to medium saucepan: rice, coconut milk, water, and salt. Bring to a boil on high, then reduce heat to low. Cover pot with lid and cook 12–14 minutes until liquid has been absorbed and rice is tender.
  3. Remove rice from heat. Fluff rice with a fork and stir in lime zest and juice, cilantro, and pepper (if desired). Serve.
