Garlic Lemon Vinaigrette Weeknight Salad

This delicious Italian-inspired salad works perfectly as a side or as the whole meal. Craft a delicious, yet-simple, vinaigrette that will make any salad a staple.

INGREDIENTS

For the Vinaigrette

  • 1 cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp red wine vinegar
  • 1 Spice World Shallot, peeled and finely minced
  • Spice World Ready-to-Use Minced Garlic
  • 1 Tbsp Dijon mustard
  • ½ teaspoon dried oregano
  • 1 tsp honey
  • Sea salt and fresh ground black pepper

For the  Salad

  • 1 head romaine lettuce, chopped
  • ½ red onion, thinly sliced
  • 2 cups cherry tomatoes
  • 2 cups croutons
  • ½ cup freshly grated Parmesan cheese
  • 1/3 cup sliced pepperoncini peppers
  • ½ cup black olives, sliced
  • Pepper, to taste
INSTRUCTIONS

  • Combine olive oil, Spice World Shallots, and Spice World Garlic in a small jar with a lid.
  • Allow to sit for 15 minutes so the oil infuses with shallot and garlic flavor.
  • Add the remaining dressing ingredients to a jar and whisk until combined.
  • In a large bowl, mix together salad ingredients (except the croutons), tossing with the salad dressing. Lasts one week refrigerated.
  • Top with croutons and enjoy.
