Aloo Matar

Created in partnership with Orlando Pride, this Aloo Matar recipe is so tasty and comes together quickly with a Spice World kick! Being a blend of OP Soccer star Caitlin Cosme’s Indian and Puerto Rican heritage, this meal is vegetarian, easy to make, and rich in B vitamins with the help of Easy Onion.

Ingredients

  • 2 Tbsp olive oil
  • 2 tsp cumin seeds
  • 2 tsp turmeric
  • 4 Tbsp Spice World Ready-to-Use Minced Garlic
  • 2 Tbsp Spice World Squeezable Ginger
  • 2 Tbsp Spice World Easy Onion
  • 1 onion, diced
  • 3 plum tomatoes, seeded and diced
  • 1 tsp chili powder
  • 1 Tbsp coriander
  • 3 baking potatoes, peeled, 1-inch dice, submerged in water
  • 1 cup water
  • 1½ cups green peas, fresh or frozen
  • 1 tsp garam masala
  • 1 tsp salt, or to taste
  • Freshly ground black pepper
  • 1 cup cilantro, chopped

Instructions

  • Pour oil into a medium saucepan on medium-high. Add cumin seeds and cook until they begin to pop. Stir in turmeric and cook until fragrant, 5–10 seconds.
  • Add Spice World Minced Garlic, Spice World Ginger and Spice World Easy Onion, sauté for 15 seconds. Add onions and stir to mix all the ingredients together. Cook, stirring occasionally, until onions begin to brown, 8–10 minutes.
  • Stir in tomatoes, chili powder, and coriander. Lower the heat to medium-low. Cover and simmer until a paste consistency, 8–10 minutes. Add potatoes and water, cover with a lid, and simmer until tender, 15-20 minutes, stirring occasionally. Stir in peas, garam masala, salt, and pepper to taste.
  • Add cilantro and serve.
