Creamy Cauliflower Pesto Sauce

  • 12 oz cauliflower
  • 1 cup unsweetened almond milk
  • 1 tsp salt
  • 1 Tbsp butter
  • 1 tsp Spice World Ready-to-Use Minced Garlic
  • 2-4 oz Spice World Viva! Italian Herb & Garlic Seasoning Blend
  • 1/4 cup whipped cream cheese
  • 1 cup shredded mozzarella
  • 1/2 cup shredded parmesan
  • Salt and pepper to taste
  • 1 lb pasta (any kind)

  1. Boil the cauliflower until tender. Test it with a fork to see if you can push through easily. If there isn’t much resistance, the cauliflower is done.
  2. Add to the blender with almond milk and salt. Blend until creamy.
  3. In a pan over medium-high heat, melt butter. Add garlic. Saute until fragrant.
  4. Add the cauliflower mixture to the pan.
  5. Stir in Spice World Viva! Italian Herb & Garlic Seasoning Blend.
  6. Bring to a light simmer.
  7. Then add cream cheese, mozzarella, and parmesan. Stir on medium-low heat until creamy. Add salt and pepper to taste.
  8. In a separate pan, cook the pasta according to the package.
  9. Combine sauce and pasta, then serve.
  10. Optionally, you can add 1/2 cup frozen peas, 1/4 cup sun-dried tomatoes, and seasoned grilled chicken breast to elevate this dish.
