Creamy Mushroom Soup

Cream of Mushroom Soup doesn’t have to be complicated to make! This recipe packs all of that delicious earthy mushroom flavor with a few other recipe staples!

Ingredients

  • 5 cups sliced mushrooms
  • 1 ½ cups chicken broth
  • 1/3 cup Spice World Easy Onion
  • ¼ tsp dried thyme
  • 3 Tbsp butter
  • 3 Tbsp all purpose flour
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 cup half-and-half
  • 1 Tbsp sherry vinegar or apple cider vinegar

Instructions

  • In a saucepan, cook mushrooms in the broth with thyme until tender, about 10–15 minutes.
  • In a blender or food processor, puree the mushroom mixture, adding the Easy Onion. Leave some chunks of mushrooms in it. Set aside.
  • In the same saucepan, melt the butter and whisk in the flour until smooth. Add the salt, pepper, half and half, and mushroom puree. Stirring constantly, bring the soup to a boil and cook until thickened.
  • Stir in sherry vinegar or apple cider vinegar.
