Cream of Mushroom Soup doesn’t have to be complicated to make! This recipe packs all of that delicious earthy mushroom flavor with a few other recipe staples!
In a saucepan, cook mushrooms in the broth with thyme until tender, about 10-15 min.
In a blender or food processor, puree the mushroom mixture adding the Easy Onion. Leave some chunks of mushrooms in it. Set aside.
In the same saucepan, melt the butter, whisk in the flour until smooth. Add the salt, pepper, half and half and mushroom puree. Stirring constantly, bring the soup to boil and cook until thickened.
