Easy Matzah Ball Soup

Ingredients

  • 1 box matzah ball mix
  • ¼ cup vegetable oil
  • 2 large eggs
  • ½ cup Spice World Ready-to-Use Chopped Easy Onion
  • 1 cup sliced baby carrots
  • ¼ tsp black pepper
  • ¼ tsp dill weed
  • 3 (32-ounce) chicken broth cartons

Instructions

  • Follow the directions on the package to make the matzah ball mix.
  • Place the mixture in the fridge for a minimum of 20 minutes.
  • In a stockpot, heat up 1 tablespoon of vegetable oil and add in the Spice World Ready-to-Use Chopped Easy Onion and carrots, sweating them for about 5 minutes.
  • Add two and a half cartons of your favorite brand of chicken broth and bring it to a boil.
  • Once boiling, add ¼ teaspoon black pepper and dill weed.
  • Make tablespoon-sized matzah balls from the mix and drop them into the boiling liquid.
  • Turn the heat down to medium heat and simmer for 30 minutes.
  • Once it’s ready to serve, garnish with parsley and enjoy.
