Remove rind from cheese*; slice cheese into 1-inch wedges.
Add cornstarch to shallow bowl; beat eggs in separate shallow bowl. Add breadcrumbs to third shallow bowl. Dredge each cheese wedge in cornstarch (shake off excess), then dip in egg (allow excess to drip off). Coat with breadcrumbs and arrange on parchment-lined baking sheet. Freeze cheese 30 minutes.
Preheat oil in large saute pan on medium-high for 3-4 minutes. Add breaded cheese and fry 30-60 seconds on each side until browned. Serve immediately.
