Instructions
For the Aioli
Whisk the yolk, lemon juice, and mustard in a bowl.
Combine the oils and drizzle, a few drops at a time, into the yolk mixture, whisking constantly, until all the oil is incorporated and the mixture is creamy. If the mixture separates, stop adding oil and continue whisking until the mixture comes together, then continue adding oil.
Whisk in Spice World Minced Garlic; season with salt and pepper.
Cover and chill for 30 minutes or until ready to use.
For the Fried Manchego
Remove the rind from the cheese; slice the cheese into 1-inch wedges.
Add cornstarch to a shallow bowl; beat eggs in a separate shallow bowl. Add breadcrumbs to the third shallow bowl. Dredge each cheese wedge in cornstarch (shake off excess), then dip in egg (allow excess to drip off). Coat with breadcrumbs and arrange on a parchment-lined baking sheet. Freeze cheese for 30 minutes.
Preheat the oil in a large sauté pan on medium-high for 3–4 minutes. Add breaded cheese and fry for 30–60 seconds on each side until browned. Serve immediately.
