Garlic Parmesan Latkes

Ingredients

  • 4 cups grated potato (Russet or Gold Potatoes)
  • 2 tsp Spice World Fresh Diced Garlic OR
    2 cloves Spice World Peeled Garlic, finely minced
  • ½ cup freshly grated Parmesan
  • Salt and Pepper, to taste
  • 1 egg, beaten
  • 3 Tbsp flour
  • Canola or vegetable oil, for frying
  • Sour cream, for serving

Instructions

  1. Squeeze as much excess water from the grated potato as possible. Add all the remaining ingredients in a large bowl and toss together until well combined.
  2. Heat a half inch of oil in a large non-stick skillet over medium-low to medium heat.
  3. Drop the latke mixture by 1/4 cup measures into the hot oil, spreading it out to about a half inch thickness. You can make them thinner if you prefer. Fry until golden brown on one side, then turn and cook until golden brown on the opposite side.
  4. Drain on paper towels. Serve with sour cream.
