Garlic Parmesan Latkes

Ingredients

  • Spice World Garlic (choose one)
  • 4 cups grated potato (Russet or Gold Potatoes)
  • ½ cup freshly grated Parmesan
  • 1 egg, beaten
  • 3 Tbsp flour
  • Canola or vegetable oil, for frying
  • Salt and Pepper, to taste
  • Sour cream, for serving

Instructions

  1. Squeeze as much excess water from the grated potato as possible. In a large bowl, combine potato, Spice World Garlic, Parmesan, salt, pepper, egg, and flour; stir well.
  2. Heat a half inch of oil in a large non-stick skillet over medium-low to medium heat.
  3. Drop the latke mixture by ¼ cup measures into the hot oil, spreading out mixture to about ½ inch thickness. You can make them thinner if you prefer. Fry until golden brown on one side, then turn and cook until golden brown on the opposite side.
  4. Drain on paper towels. Serve with sour cream.
