Make the sauce: In a small bowl, mix Spice World Squeezable Ginger, rice wine vinegar, soy sauce, and 2 tablespoons of water. Set aside.
In a medium-sized bowl, toss shrimp with salt and pepper.
Cook the vegetables: In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the broccoli, bell pepper, and mushrooms. Add 2 pinches of salt and cook for 5-6 minutes, stirring occasionally, until crisp tender. Stir in Spice World Ready-to-Use Minced Garlic.
Transfer vegetables to a heat-resistant bowl and return the empty skillet or wok to the stovetop. Add the remaining tablespoon of oil to the skillet and add the shrimp. Cook for 3 minutes, turning periodically.
Add the sauce from the first step and toss to coat. Add the vegetables back to the skillet and gently stir for a few minutes. Serve hot.
