Honey Ginger Cake

Ingredients

  • 1 tsp cinnamon
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 ¼ cups unbleached flour
  • ½ cup sugar
  • ½ cup vegetable oil
  • ½ cup honey
  • 2 large eggs
  • ½ cup strong black tea
  • ½ tsp Spice World Squeezable Ginger
  • 1/8 tsp nutmeg
  • ¼ tsp Kosher salt

Instructions

  1. Preheat oven to 320oF and grease and line a loaf pan with parchment paper.
  2. In a large mixing bowl, add the eggs, sugar, oil, Spice World Squeezable Ginger, and honey mixing well with a whisk. Add the hot tea to the mixture and stir until combined.
  3. In a separate medium mixing bowl, add the dry ingredients: flour, baking powder, baking soda, salt, cinnamon and nutmeg. Mix with a whisk until well combined.
  4. Pour the dry ingredients into the wet ingredients mixture and carefully mix until just combined, being careful not to overmix.
  5. Pour the batter into the loaf pan and bake 40-45 minutes until a toothpick comes out clean.
  6. Drizzle honey on top of the cake right when it comes out of the oven. Smooth it out with a spoon.
  7. Let the cake cool for at least 30 minutes and serve.
