Italian Herb Egg White Omelette

  • 3 egg whites
  • 1 Tbsp olive oil
  • 2 Tbsp red onions, diced
  • ¼ cup mushrooms, diced
  • ½ cup spinach, chopped
  • 2 tsp Spice World Viva! Italian Herb Seasoning Blend
  • 1 tsp Spice World Ready-to-Use Minced Garlic
  • 2 Tbsp feta cheese, crumbled
  • Salt and pepper, to taste

  • To separate the egg whites from the yolks, simply crack the egg into one cupped hand, allowing just enough space between your fingers for the yolk to catch and the white to separate into your bowl.
  • In a bowl, beat egg whites until frothy. Add salt and pepper. Mix well, and set aside.
  • In a skillet over medium heat, add olive oil and Spice World Ready-to-Use Minced Garlic. Add red onions and mushrooms and sauté for 5 minutes or until tender. Add spinach and Spice World Viva! Italian Herb and cook until leaves are wilted.
  • Pour the egg white mixture over the sautéed vegetables in the skillet. Sprinkle in feta cheese. As soon as the edges start to set, reduce the heat to medium-low. Gently lift the edges of the omelet and tilt the skillet to allow the runny egg whites to flow to the bottom of the pan. When the bottom of the omelet is cooked and the top is no longer runny, flip the omelet.
  • Fold the omelet, slide it onto a plate, and serve.
