Mocha Avocado Brownies

Ingredients

  • 1 ripe Hass avocado
  • 1 (15 oz) can reduced-sodium black beans
  • 1/4 tsp kosher salt
  • 1/2 cup old fashioned oats
  • 1/2 cup pure maple syrup
  • 2 tsp vanilla extract
  • 1 Tbsp canola oil
  • 1 Tbsp instant espresso
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 tsp Spice World Squeezable Ginger
  • Cooking spray
  • 1/4 cup dark chocolate morsels

Instructions

  1. Preheat oven to 350°F. Peel, pit, and chop avocado. Drain and rinse black beans. Add to bowl of food processor: avocado, beans, salt, oats, syrup, vanilla, oil, instant espresso, cocoa powder, baking powder, and ginger; pulse until smooth.
  2. Coat 9-inch square baking dish with spray. Spoon batter into dish; sprinkle top with chocolate morsels. Bake 25–30 minutes until center is set. Remove from oven and set aside 30 minutes to cool. Cut into squares; serve.
