Pasta Con Pesto Alla Melone

These simple ingredients make for a classic sauce that works with pasta like no other. Garlic amps up the flavor of this classic pesto sauce. Be sure to let it stand for the whole hour to let flavors meld and marinate. (It’ll be worth it!)

  • 1 cup grated fresh Parmesan cheese
  • 2 cups fresh basil leaves
  • ½ cup melted butter
  • Spice World Garlic
    1 jar (4.5 oz) Ready-to-Use Spice World Minced Garlic or
    9 Tbsp Spice World Squeezable Garlic or
    35 cloves Spice World Peeled Garlic, minced or
    35 cloves Spice World Fresh Garlic, minced
  • 1 Tbsp pine nuts
  • ¾ cup olive oil
  • 1 pkg vermicelli pasta (8 oz.)

  • Using a blender or food processor, grate enough Parmesan cheese to make one cup; add basil. Then add melted butter, followed by Spice World garlic, pine nuts, and finally the oil. Allow each added ingredient to blend smoothly and let stand for at least 1 hour.
  • Prepare pasta according to package directions. Mix pesto with pasta fresh from boiling water. Do not add too much pesto, but allow each person a chance to adjust flavor to taste by adding more pesto if desired. Leftover pesto will last quite a while if refrigerated in a plastic container but do not freeze. A light salad with oil and vinegar dressing goes great with this.
