Real garlic flavor comes out when you cook this dish in the crockpot. This version of taco chicken is a healthier alternative to ground beef. Just remember to shred the chicken once it’s done to have chicken for tacos, sandwiches or even salads.
Total Time: 7 hours and 15 minutes
2 lbs boneless skinless chicken breasts
2 packs of taco seasoning mix
2 cans of Rotel Tomatoes (mild) (one drained, one undrained)
Put in Crockpot on low setting for 6-7 hours. Then stir with fork until all chicken shreds and mixes with sauce. Serve in flour tortillas or taco shells with shredded cheese, sour cream and shredded lettuce.
