Slow Cooker Garlic Parmesan Chicken & Potatoes

This tender, garlicky chicken dish is slow-cooked to perfection with a good chance to melt in your mouth. It’s the perfect comfort food with a flavorful Spice World twist—not to mention how good your kitchen is going to smell!

Ingredients

  • Spice World Garlic
  • 6 bone-in, skin-on chicken thighs
  • ½ tsp dried basil
  • ¼ tsp dried rosemary
  • ¼ tsp paprika
  • Salt and pepper, to taste
  • 1.5 lbs baby red potatoes
  • 4 Tbsp olive oil, divided
  • ½ tsp dried thyme
  • 1 cup Parmesan cheese
  • Parsley for garnish

Instructions

  1. Season chicken with basil, paprika, rosemary, salt, and pepper.
  2. Add 2 tablespoons of olive oil to a large skillet over medium high heat. Add chicken, skin side down, and sear both sides until golden brown, about 2–3 minutes per side. Set aside.
  3. Halve or quarter baby red potatoes (depending on size), add the remaining 2 tablespoons of olive oil, and season with Spice World Organic Ready-To-Use Minced Garlic, thyme, salt, pepper, and toss. Add it to the slow cooker.
  4. Add chicken to the slow cooker in an even layer on top of your potatoes.
  5. Cover and cook on low heat for 7-8 hours or on high for 3-4 hours, or until the chicken reaches an internal temperature of 165°F.
  6. Sprinkle it with Parmesan cheese and parsley, and enjoy!
