Tomato Pasta Salad

Mint and garlic make for a fresh tasting side that goes well with every kind of meat or fish. And, if you’ve got a vegetarian at your table, they’ll have something special as a main course.

Ingredients

  • 5 large tomatoes, diced
  • ½ cup fresh basil, chopped
  • Spice World Garlic
    1-1/2 tsp. Spice World Ready-to-Use Minced Garlic or
    1-1/2 tsp. Spice World Squeezable Garlic or
    3 cloves Spice World Peeled Garlic, minced or
    3 cloves Spice World Fresh Garlic, minced
  • 1 can diced olives
  • ½ tsp. salt
  • ½ tsp. ground black pepper
  • 16 oz. penne pasta, cooked
  • 1/3 cup olive oil
  • 1 tsp. fresh mint, minced
  • 8 oz. mozzarella cheese, cubed

Instructions

  • Combine tomatoes, basil, Spice World Garlic, salt and pepper; top with penne pasta. Set aside.
  • Combine oil, mint leaves in glass measuring cup; microwave on high for one minute.
  • Pour oil mixture over pasta; add cheese cubes and toss gently.
  • Cover and chill.
