Ingredients
5 large tomatoes, diced
½ cup fresh basil, chopped
Spice World Garlic
1½ tsp. Spice World Ready-to-Use Minced Garlic or
1½ tsp. Spice World Squeezable Garlic or 3 cloves Spice World Peeled Garlic, minced or 3 cloves Spice World Fresh Garlic, minced
1 can diced olives
1 tsp. salt
½ tsp. ground black pepper
16 oz. penne pasta, cooked
⅓ cup olive oil
1 tsp. fresh mint, minced
8 oz. mozzarella cheese, cubed

Instructions
Combine tomatoes, basil, Spice World Garlic, salt, and pepper; top with penne pasta. Set aside.
Combine oil and mint leaves in a glass measuring cup; microwave on high for one minute.
Pour the oil mixture over the pasta; add the cheese cubes and toss gently.
