Your Mother’s Day Menu

There’s no one more deserving of a terrific, thoughtful, and, most importantly, tasty meal than your mother! This Mother’s Day weekend, make mom’s day with a fresh and fun menu perfect for early summer. Mix and match these simple and delicious recipes to create a beautiful brunch, picnic lunch, or elegant dinner. Not only are they full of flavor, but they are easy to put together and even easier to enjoy (even if you aren’t the most graceful in the kitchen). One thing is for sure: Your mom will love every moment spent with you and every bite of this lovely Mother’s Day menu.

Entrees

Garlic & Lemon-Dill Salmon

Salmon is a rich source of omega-3 fatty acids (EPA and DHA) which can help keep Mom’s heart strong and healthy. This marinated and grilled salmon shines with the light, bright flavors of lemon, garlic, and dill. Serve atop a fresh salad or alongside eggs and toast.

Garlic Avocado Toast

Let’s toast to Mom, literally. Garlic avocado toast adds a slightly spicy twist to a traditional brunch favorite.

Ingredients

1 slice of your favorite bread (thicker slices work best)
1 clove of Spice World Fresh Garlic or Fresh Organic Garlic
½ ripe avocado
Pinch kosher salt
Freshly ground black pepper, to taste
Crushed red pepper flakes, to garnish

Instructions

Toast sliced bread to your desired doneness. Rub Spice World Fresh Garlic or Fresh Organic Garlic over the toasted bread surface.
Scoop out the avocado flesh (after gently removing the pit) and place in a small bowl. Season with kosher salt and pepper. Lightly mash with a fork.
Spread the mashed avocado over the toast. Sprinkle crushed red pepper flakes on top for heat. Enjoy immediately.

For richer garlic flavor, prepare this recipe with roasted whole bulbs of Spice World Fresh Garlic or Spice World Fresh Organic Garlic.

Roasted Garlic:

Preheat oven to 400ºF.
Peel the papery outer layers of garlic head (bulb) until the cloves are exposed. Using a sharp knife, slice off about 1/2-inch from the top of the cloves to expose the garlic. You may have to angle your knife to expose the cloves on the outside.
Place garlic heads in an oven safe pan (like a muffin tin or ramekin). Lightly drizzle good quality olive oil over each garlic head. Rub olive oil over each exposed garlic clove. Cover garlic heads with aluminum foil.
Bake for 30-40 minutes until the garlic cloves can be easily pierced with a fork. Allow garlic to cool. Once garlic is cool enough to handle, extract the roasted garlic by squeezing the bulb.

Side Dishes

Easy Onion Cavatappi Macaroni & Cheese

This could be the mother of all macaroni and cheese recipes, and it couldn’t be easier, thanks to Spice World Ready-to-Use Chopped Easy Onion.

Ingredients

2 lbs of Cavatappi pasta
2 lbs of shredded cheese (ideally a blend of sharp cheddar, parmesan, and mozzarella)
2 qts of heavy cream
1 qt of half and half
½ jar of Spice World Ready-to-Use Easy Onion
¼ tsp of garlic powder
1 Tbsp of salt
½ tsp of pepper

Instructions

Cook pasta according to package directions, then set aside.
Add all liquid ingredients to one pot and cook for 10 minutes on medium heat.
Add the blended cheeses in small portions. Keep mixing until it’s incorporated into a thick sauce.
Add the cooked pasta back in and mix.
Sprinkle with your favorite crispy topping and enjoy!
