Ingredients

  • Spice World Garlic (choose one)
  • 6 large tomatoes, halved
  • 1 large onion, sliced
  • 1 tsp salt
  • 1 tsp pepper
  • Olive oil
  • 5 cups chicken broth
  • ¼ cup heavy cream
  • ½ cup Parmesan cheese
  • Basil, for garnish

Instructions

  1. Preheat air fryer to 400°F.
  2. Once heated, add tomatoes, sliced onion, and Spice World Fresh Peeled Garlic to air fryer. Add a large drizzle of olive oil and season with salt and pepper to taste. Roast for 30 minutes.
  3. Once vegetables have finished roasting, add a drizzle of olive oil to a large pot over medium high heat. Transfer roasted vegetables from air fryer to pot.
  4. Add chicken broth to pot.
  5. Using an emulsifier, liquify tomatoes thoroughly.
  6. Add heavy cream, ¼ cup Parmesan cheese, 1 tsp salt, and 1 tsp pepper, allowing the flavors to combine.
  7. Top servings evenly with remaining ¼ cup Parmesan cheese and garnish with basil.
