A rich, roasted-vegetable soup made by air-frying juicy tomatoes, sliced onion, and garlic then blending them with savory chicken broth, cream, and Parmesan for a warm, flavorful bowl finished with fresh basil.
Once heated, add tomatoes, sliced onion, and Spice World Fresh Peeled Garlic to air fryer. Add a large drizzle of olive oil and season with salt and pepper to taste. Roast for 30 minutes.
Once vegetables have finished roasting, add a drizzle of olive oil to a large pot over medium high heat. Transfer roasted vegetables from air fryer to pot.
Add chicken broth to pot.
Using an emulsifier, liquify tomatoes thoroughly.
Add heavy cream, ¼ cup Parmesan cheese, 1 tsp salt, and 1 tsp pepper, allowing the flavors to combine.
Top servings evenly with remaining ¼ cup Parmesan cheese and garnish with basil.
