Air Fryer Roasted Vegetable Soup

Ingredients

  • 6 large tomatoes, halved
  • 1 large onion, sliced
  • 5 cloves Spice World Fresh and Peeled Garlic
  • 1 tsp salt
  • 1 tsp pepper
  • Olive oil
  • 5 cups chicken broth
  • 1 Tbsp Spice World Ready-to-Use Minced Garlic
  • ¼ cup heavy cream
  • ½ cup parmesan cheese
  • Basil, for garnish

Instructions

  • Preheat air fryer to 400°F.
  • Once heated, add tomatoes, sliced onion, and Spice World Fresh and Peeled Garlic to air fryer. Add a large drizzle of olive oil and season with salt and pepper. Roast for 30 minutes.
  • Once vegetables have finished roasting, add a drizzle of olive oil to a large pot over medium-high heat. Transfer roasted vegetables from air fryer to pot.
  • Add chicken broth to pot.
  • Using an emulsifier, liquify tomatoes thoroughly.
  • Add heavy cream, ¼ cup parmesan cheese, 1 tsp salt, and 1 tsp pepper, allowing the flavors to combine.
  • Serve with a sprinkle of parmesan cheese and basil for garnish.
