Ingredients

Fritters

  • 3 cups oil for frying
  • ½ cup all-purpose flour
  • ½ cup fine cornmeal
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp sugar
  • 1 large egg, lightly beaten
  • ½ cup milk
  • 1 (12 oz) can whole-kernel corn, drained
  • 4 oz sharp cheddar cheese, diced into ¼-inch pieces

Aioli

Instructions

  1. Heat oil in a heavy-bottomed pot to 375°F.
  2. Combine flour and remaining fritter ingredients in a bowl. Chill in refrigerator for 10 minutes.
  3. While batter is chilling, combine aioli ingredients in a small bowl and set aside.
  4. Fry corn fritters by dropping spoonfuls of batter into hot oil. Cook until golden brown. Remove from oil and place in a paper-towel-lined bowl until ready to serve.
  5. Transfer to serving dish and serve with aioli.
