Make this marinade the day before you want to serve this dish so the flavors have time to meld. Once you take the salmon off the grill, DO heat the rest of this marinade for those who want even more punch on their plates!
Combine all ingredients and rub ½ of the mixture onto steaks and marinate overnight or at least 4 hours. Grill steaks over high heat, watching to avoid large flames, and cook them medium rare. Brown on both sides.
Let them sit to allow the juices to redistribute, about 2–3 minutes.
Warm the remaining marinade or sauce and serve over steaks.
