A silky, rich ginger-infused caramel sauce made by cooking sugar into amber caramel then whisking in butter, cream, and minced ginger for a sweet-spicy drizzle over ice cream, toast, or fruit.
In a small saucepan, dissolve sugar in 2 tablespoons of water over medium heat (don’t stir). Allow to cook until mixture turns amber in color and forms the caramel.
Whisk in butter until fully melted. Slowly add heavy cream (or coconut cream) with caution, as mixture will bubble up.
