Ingredients

  • 1 jar Spice World Italian Herb & Garlic
  • Spice World Garlic
  • 2 oz olive oil
  • 1 lb chicken sausage, casings removed
  • 1 large onion, diced
  • 2 medium carrots, peeled, cut in half lengthwise, and sliced into ¼-inch half moons
  • 28 oz can peeled tomatoes
  • 2 quarts vegetable or chicken stock
  • 1 Tbsp Italian seasoning
  • ½ lb ditalini pasta
  • 15 oz can cannellini beans, drained
  • Salt and pepper to taste
  • ½ cup shredded Parmesan cheese

Instructions

  1. Heat oil in a large pot over medium high heat.
  2. Add sausage and break up into small pieces while cooking.
  3. Using a slotted spoon, remove sausage from pot and set aside.
  4. To the pot, add onions, carrots, and Spice World Fresh Garlic.
  5. Cook 3-4 minutes until veggies are softened and then add Spice World Italian Herb & Garlic; cook 2-3 minutes.
  6. Pour peeled tomatoes into a small bowl, using your hands to break up tomatoes into small pieces.
  7. Add tomatoes, stock, and Italian seasoning to carrot and onion mixture and bring to a boil.
  8. Add pasta and cook 9 minutes, stirring occasionally.
  9. When pasta is tender, add beans and bring to a simmer.
  10. Cook for about 5-6 minutes; season with salt and pepper to taste.
  11. Serve with Parmesan cheese. Serving size: 1½ cups per person.
