Pesto Avocado Stuffed Tomatoes

Ingredients

  • 30 cherry tomatoes—about 1 pint
  • ½ avocado, medium, pitted, peeled and cut into 1-inch chunks
  • 2 oz cream cheese, softened
  • 2 Tbsp Spice World Pesto
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  • Cut a thin slice from the top of each tomato. With a small spoon or melon baller, hollow out the tomatoes.
  • To prepare the filling, combine avocado, cream cheese, pesto, lemon juice, salt, and pepper in a medium-sized bowl. Use a fork to gently mix.
  • With a spoon, scoop out the inside of each tomato and fill it with the pesto mixture.
  • Serve immediately, or cover loosely and refrigerate.
  • Lasts 2 days
