Pesto Avocado Stuffed Tomatoes
a refreshingly easy bite size appetizer to make in a matter of minutes!
Ingredients
30 cherry tomatoes—about 1 pint
½ avocado, medium, pitted, peeled and cut into 1-inch chunks
2 oz cream cheese, softened
2 Tbsp Spice World Pesto
1 tsp lemon juice
Salt and pepper to taste
Instructions
Cut a thin slice from the top of each tomato. With a small spoon or melon baller, hollow out the tomatoes.
To prepare the filling, combine avocado, cream cheese, pesto, lemon juice, salt, and pepper in a medium-sized bowl. Use a fork to gently mix.
With a spoon, scoop out the inside of each tomato and fill it with the pesto mixture.
Serve immediately, or cover loosely and refrigerate.
