Pesto Avocado Stuffed Tomatoes
a refreshingly easy bite size appetizer to make in a matter of minutes!
30 cherry tomatoes – about 1 pint
½ avocado – medium, pitted, peeled and cut into 1 inch chunks
2oz cream cheese – softened
Spice World Pesto
1 tsp lemon juice
Salt and pepper to taste
Cut a thin slice from the top of each tomato. With a small spoon or melon baller hollow out the tomatoes.
To prepare the filling, combine avocado, cream cheese, pesto, lemon juice, salt & pepper in a medium sized bowl. Use a fork to gently mix.
With a spoon, scoop out the inside of each tomato and fill with pesto mixture.
Serve immediately or cover loosely and refrigerate.
