Pesto Avocado Stuffed Tomatoes

a refreshingly easy bite size appetizer to make in a matter of minutes!


  • 30 cherry tomatoes – about 1 pint
  • ½ avocado – medium, pitted, peeled and cut into 1 inch chunks
  • 2oz cream cheese – softened
  • 2 Tbsp Spice World Pesto
  • 1 tsp lemon juice
  • Salt and pepper to taste


  • Cut a thin slice from the top of each tomato. With a small spoon or melon baller hollow out the tomatoes.
  • To prepare the filling, combine avocado, cream cheese, pesto, lemon juice, salt & pepper in a medium sized bowl. Use a fork to gently mix.
  • With a spoon, scoop out the inside of each tomato and fill with pesto mixture.
  • Serve immediately or cover loosely and refrigerate.
