Pesto Caprese Chicken Sandwich

Ingredients

  • 4 Ciabatta rolls 
  • 8 oz Fresh mozzarella ball, thinly sliced 
  • 2-3 Fresh Roma tomatoes, sliced 
  • 2 boneless, skinless chicken breasts 
  • Balsamic glaze 
  • 1 jar Spice World Pesto 
  • 1 tsp Spice World Ready-to-Use Minced Garlic 
  • 1 Tbsp of butter 
  • 2 tsp salt and pepper 
  • 1 Tbsp olive oil

Instructions

  • Slice the chicken breasts in half lengthwise. Season generously with salt and pepper.  
  • Heat a large skillet over medium-high with a drizzle of olive oil and a tablespoon of butter. Once the butter has melted, add the chicken breasts to the pan.  
  • Cook the chicken for 4-6 minutes on each side.  
  • While chicken is cooking, slice rolls in half and lightly toast.  
  • Spread Spice World Pesto generously on both sides of the roll.  
  • When chicken has finished cooking, place on roll and top with fresh mozzarella, tomato slices, and a drizzle of balsamic glaze.
