  1. Preheat oven to 375°F.
  2. Combine tomatoes and olive oil in a small bowl, then place on a parchment-lined baking sheet.
  3. Bake for about 20 minutes or until tomatoes burst and color deepens.
  4. Set aside and allow to cool completely.
  5. Place cooled tomatoes in a medium bowl.
  6. Add Spice World Italian Herb & Garlic, mozzarella, salt, and pepper and stir.
  7. Transfer phyllo cups onto a parchment-lined baking sheet.
  8. Place 1 teaspoon of tomato filling in each cup and bake for 5 minutes or until cheese is melted.
  9. Save leftover filling for another use.
  10. Allow phyllo cups to cool before serving. Serving size: 3 phyllo cups per person.
