Ingredients

  • 2 oz Spice World Italian Herb & Garlic
  • 2 heads broccoli
  • Salt to taste
  • 1 head cauliflower, cut into equal-sized florets
  • 1 oz olive oil
  • 1 Spanish onion, peeled, halved, and cut into thick slices
  • 1-2 zucchini, cut into quarters, seeds removed, and cut into large strips
  • 1-2 yellow squash, cut into quarters, seeds removed, and cut into large strips
  • Salt and pepper to taste

Instructions

  1. Remove broccoli florets from stalks and cut into equal-sized pieces.
  2. Using a vegetable peeler, remove outer layer from broccoli stems. Remove tops and bottoms of stalks. Cut peeled stalks into ¼-inch bias-cut slices.
  3. In a large pot, bring water and salt to a boil. Add stem slices only and boil 2 minutes or until tender. Remove from water and place in ice bath.
  4. Add broccoli and cauliflower florets to boiling water and cook 2-3 minutes or until tender. Remove from water and add to ice bath.
  5. Strain vegetables from ice bath, place on paper towels, and allow to dry slightly.
  6. Heat oil in a large sauté pan over medium-high heat.
  7. Add onions and cook 2 minutes or until soft.
  8. Add broccoli florets, stem slices, cauliflower florets, zucchini, squash, and Spice World Italian Herb & Garlic.
  9. Sauté 3-4 minutes or until vegetables are heated.
  10. Season with salt and pepper. Serving size: 1 cup.
