  1. Preheat oven to 350°F.
  2. Heat oil in a large sauté pan over medium heat.
  3. Add Spice World Fresh Garlic and Spice World Fresh Shallots. Stir for 2-3 minutes or until shallots are soft.
  4. Add half of Spice World Italian Herb & Garlic and 1 teaspoon chili flakes. Cook 2 minutes.
  5. Add spinach and allow to cook down and wilt.
  6. Remove from heat and let cool.
  7. Place cooled mixture into a food processor and pulse until finely chopped. Transfer to a medium bowl and add cheese.
  8. Stir to combine; add salt and pepper to taste.
  9. Spread remaining Spice World Italian Herb & Garlic over chicken.
  10. Spread half of spinach mixture over each chicken breast and then roll tightly, making sure to tuck in sides. Discard any filling that comes out.
  11. Use toothpicks if necessary to keep chicken closed. Place in freezer for 1 hour.
  12. Pour oil to depth of 1½ inches in a heavy-bottomed pot and heat to 360°F.
  13. Remove chicken from freezer.
  14. Set up 3 bowls for flour, beaten egg, and panko. Carefully dredge chicken in flour, then coat with egg, and then coat with panko.
  15. Carefully place chicken in hot oil and fry for 1-2 minutes. Turn chicken and cook another 1-2 minutes.
  16. Remove from oil and place on parchment-lined baking sheet. Place in oven and bake for about 15 minutes or until internal temperature reaches 165°F.
  17. Remove from oven and allow to cool slightly before slicing.
  18. Serving size: ½ chicken breast per person.
