Preheat oven to 350o Grease a 9 x 13-inch baking dish and set aside.
Bring a large pot of water to boil. Cook egg noodles according to package directions or until al dente. Drain and rinse and add the butter into the noodles and mix in pot.
In a large bowl, mix eggs, milk, sour cream, ½ of cinnamon, Spice World Squeezable Ginger, and sugar and until combined.
Pour the egg mixture over the buttered noodles and mix well.
Add the cottage cheese to the noodle mixture until well incorporated.
Pour noodle mixture into the baking dish and smooth the top.
Combine crushed cornflakes, brown sugar and remaining cinnamon and sprinkle evenly over the top of the noodles. Add a few dots of butter.
