Weeknight Salad

Ingredients

For the Vinaigrette

  • Spice World Garlic
  • 1 shallot, peeled and finely minced Spice World Shallots
  • 1 cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp red wine vinegar
  • 1 Tbsp Dijon mustard
  • ½ teaspoon dried oregano
  • 1 tsp honey
  • Sea salt and fresh ground black pepper

For the Salad

  • 1 head romaine lettuce, chopped
  • ½ red onion, thinly sliced
  • 2 cups cherry tomatoes
  • 2 cups croutons
  • ½ cup freshly grated Parmesan cheese
  • ⅓ cup sliced pepperoncini peppers
  • ½ cup black olives, sliced
  • Pepper, to taste

Instructions

  1. Combine olive oil, Spice World Shallots, and Spice World Garlic in a small jar with a lid.
  2. Allow to sit for 15 minutes so the oil infuses with shallot and garlic flavor.
  3. Add the remaining dressing ingredients to a jar and whisk until combined.
  4. In a large bowl, mix together salad ingredients (except the croutons), tossing with the salad dressing. Lasts one week refrigerated.
  5. Top with croutons and enjoy.
