Instead of crostini, hollow out larger cherry tomatoes using a small spoon or melon baller. Fill each tomato with the pesto avocado mixture and serve immediately — or refrigerate for up to 2 days. 

Instructions

  1. To prepare the topping, combine Spice World Pesto, avocado, cream cheese, lemon juice, salt, and pepper in a medium mixing bowl.
  2. Cut the cherry tomatoes into small slices.
  3. Spoon the pesto avocado mixture onto crostini crackers.
  4. Top each cracker with slices of cherry tomato.
  5. Serve immediately and enjoy!
